Christmas Cookies

  • 2 eggs
  • 1/8 teaspoon salt
  • 1/3 cup sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon grated lemon rind
  • 1/2 cup butter, melted and cooled
  • Sifted powdered sugar

Combine eggs and salt in a large mixing bowl, beating at medium speed of an electric mixer. Gradually add 1/3 cup sugar; beat at high speed 15 minutes or until tick and lemon colored. Fold in flour, 2 tablespoons at a time, and lemon rind. Fold in butter, 1 tablespoon at a time. Spoon 1 tablespoon batter into greased and floured madeleine molds. Bake at 400° for 8 to 10 minutes or until lightly browned. Remove from molds, and cool flat side down on wire racks. Sprinkle with powdered sugar. Store in airtight containers.

Yield: 1 dozen.
