Christmas Cookies
- 1 cup butter or margarine
- 2/3 cup sugar
- 1/2 cup light corn syrup
- 1 egg, beaten
- 1 cup chopped mixed candied fruit
- 1 cup chopped toasted blanched almonds
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1/4 teaspoon soda
- 1/4 teaspoon salt
- 1 teaspoon ground cardamom seeds
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground nutmeg
Cream butter in a large mixing bowl; gradually add sugar and syrup, beating until light and fluffy. Add egg; blend well. Stir in fruit, almonds, and vanilla.
Sift together flour, soda, salt, and spices in a medium mixing bowl; add to creamed mixture, mixing well. Shape dough into 2 rolls, 2 inches in diameter. Wrap in waxed paper; chill.
Remove waxed paper, and cut rolls into 1/4 inch slices. Place 2 inches apart on ungreased cookie sheets. Bake at 400° for 8 to 10 minutes or until edges are browned. Remove to wire racks to cool.
Yield: about 5 dozen.
