- 3/4 cup butter, softened
- 3/4 cup shortening
- 1 cup plus 2 tablespoons sugar, divided
- 2 eggs
- 2 teaspoons grated orange rind
- 4 cups all-purpose flour
- 1 egg white
Cream butter and shortening; gradually add 1 cup sugar, beating until light and fluffy. Add 2 eggs; beat well. Stir in orange rind. Gradually add flour, stirring well. Chill dough 1 hour.
Shape dough into 1 inch balls; roll each ball into a knot, leaving 1/2 inch ends. Place 2 inches apart on ungreased cookie sheets; set aside.
Beat egg white (at room temperature) until soft peaks form. Gradually add remaining sugar, beating until stiff peaks form. Do not underbeat.
Brush meringue over cookies. Bake at 375° for 8 to 10 minutes. Remove to wire racks to cool.
Yield: about 8 dozen.
