Chicken Croquettes

  • 1/2 cup mayonnaise
  • 1/2 teaspoon salt
  • pepper
  • 1 teaspoon grated onion.
  • 1 tablespoon minced parsley
  • 1 cup teaspoon lemon juice
  • 2 tablespoons water
  • 2 table cups finely chopped cooked chicken
  • 1 cup fine bread crumbs
  • more crumbs for coating
  • 1 teaspoon worcestearshire sauce

Combine mayonnaise and seasoning. Gradually stir in the water. Add chicken and crumbs. Mix well. Let stand 10 minutes. Shape into croquettes and roll in dry bread crumbs. Place on baking sheep (ungreased) and bake in 450 degree oven until browned. Yield: 10 to 12 croquettes, depending on the size you make them. This is a good way to use left-over chicken.

If you wish, you can vary these by adding 1/2 teaspoon curry powder, or you can blend 1/2 these by adding 1/2 teaspoon curry powder, or you can blend 1/2 teaspoon chili powder in the mixture.
