Popcorn Balls

Helen Matthews, Linville High School 4 quart popcorn2 1/2 cup sugar1 cup light corn syrup1 cup water6 Tbsp oleo Keep popcorn warm. Mix other ingredients in 4 quart saucepan; stir while heating until sugar is dissolved. Cook without stirring to 290°. Pour syrup over corn, stirring to coat all the popcorn. Form immediately into balls.

Sausage Balls

Jatis Skains, DHS; Helen Matthews, Linville High School 1 lb sausage3 cups sharp Cheddar cheese, grated3 cup Bisquick® Mix all ingredients together well. Form into small balls. Bake at 425° fir 10 to 12 minutes. May be frozen before or after baking.

Sour Cream Corn Bread

Helen Matthews, Linville High School 1 cup self-rising corn meal2 eggs, slightly beaten1/2 cup cooking oil1/2 cup cream style corn1 cup sour cream Preheat oven to 450°. Mix first 4 ingredients. Fold in sour cream and mix well. Pour into preheated skillet and bake until brown.

Corn Cake

Helen Matthews, Linville High School 3/4 cup plain meal1 cup flour1/3 cup sugar3/4 tsp salt3 tsp baking powder1 egg, well beaten1 cup milk2 Tbsp bacon drippings of fat, melted Mix and sift dry ingredients. Add milk, egg, and fat. Bake in shallow buttered pan for 20 minutes at 425°.

Biscuits

Strawberry Pie

Helen Matthews, L.H.S. 1 baked pie shell3/4 cup sugar2 Tbsp cornstarch or 4 Tbsp flour1 pint fresh strawberries4 Tbsp strawberry jello3/4 cup water2 drops red food color Boil together all ingredients (except strawberries) for 3 to 4 minutes. Pour over sliced strawberries in cooled, baked pie shell.

Lazy Enchiladas

Helen Matthews, Linville High School 1 lb ground beef1 medium onion12 corn tortillas, broken in bit-size pieces1 can tomato sauce1 (No 2) can enchilada sauce1 lb cheese, shredded Brown meat and onion; add tortillas, sauces and 2 cups cheese. Place in casserole dish and cover with remaining cheese. Bake at 350° for 1 hour.
