Coconut Pie

Nina Henson, LHS 1 cup sugar3 Tbsp cornstarch2 eggs3 cup milk2 Tbsp oleo1 Tbsp vanillaCoconut Mix cornstarch and sugar. Add milk and egg yolk. Cook. Add oleo and coconut. Pour in pie shell. Top with meringue or whipped cream.

Strawberry Pie

Nina Henson, LHS 1 pint strawberries2 cup powdered sugar1 cooked pie shell2 cup whipping cream Wash strawberries and slice. Put 1 cup powdered sugar in bottom of pie shell. Add sliced strawberries. Pour 1 cup powdered sugar on and add whipped cream.

Squirrel Mulligan

Nina Henson, LHS 2 cup cooking oil4 squirrels2 cup chopped onion1 bell pepper, diced4 lb potatoes, diced1 can tomatoes1 can tomato sauce1 can lima beans1 cup riceBlack pepper1 Tbsp Louisiana Hot Sauce® Cook squirrel and debone. Mix in a large pot and cook. Add meat and simmer.

Pork Chop Casserole

Nina Henson, Linville High 6 pork chops1 can mushroom soup1 can water1 onion1 bell pepper2 Tbsp catsup1 tsp Worcestershire® sauce Brown pork chops and put in baking dish. Pour mushroom soup and water. Slice up onion and bell pepper over chops. put catsup and Worcestershire® sauce. Place in oven for 1/2 hour at 350°.

Meat Balls

Nina Henson, Linville High 1 lb ground meat1 can condensed mushroom soupSalt and pepper to tasteMayonnaise Mix ground beef, salt and pepper; roll into balls. Roll meat balls in mayonnaise and brown. Pour soup over meat balls and simmer about 40 minutes. Eat over rice or cream potatoes.

Chicken Noodle

Nina Henson, LHS 1 chicken, cooked1 package noodles3 slices cheeseSmall can pimento1 can mushroom soup Cook chicken and pick off bones. Add noodles to 3 cups of broth. Add cooked chicken and pimento and soup to noodles and simmer.
