Potato Patties

Dorothy Byrnside, FMS 2 large potatoes, grated1 small onion grated1/2 tsp salt1 egg beaten1/2 cup flour Combine all ingredients; spoon into fat. Fry until golden brown. Serve hot. Yields 4 servings.

Good for Left Mashed Potatoes Mashed potatoesOnions, choppedSaltPepper1 or 2 eggs6 - 8 crackers (saltine), crumbled1/2 cup shortening (may need more) Mix together all, except shortening. Form into patties. Melt shortening in skillet. Get real hot before placing patties in grease. Brown on one side. Turn over. Brown other side and serve.
