- 2 ENGHLISH CUCUMBERS, sliced
- 10 ounces GRAPE TOMATOES, halved lengthwise
- 1/4 cup PURPLE ONION, thinly sliced in crescent moon shapes
- SALT and PEPPER to taste
- 3 tablespoons WHITE VINEGAR
- 1 teaspoon WHITE SUGAR or more if you like
- 2 tablespoons Olive Oil
Place cucumbers, tomatoes, dill and onion in a large bowl. In a small mixing bowl whisk together the vinegar, sugar and olive oil with a pinch of Salt and Pepper. Pour onto the tomatoes, cucumbers and onion and toss to coat. Keep refrigerated until ready to serve.
