- 1 (8 ounce) package chopped dates
- 1 cup chopped pecans
- 1 cup sifted powdered sugar, divided
- 2 egg whites
- 1/2 teaspoon vanilla extract
Combine dates, pecans, and 1/2 cup sugar in a small mixing bowl. Set aside.
Beat egg whites (at room temperature) until soft peaks form. Add remaining sugar, 2 tablespoons at a time, beating until stiff peaks form. Fold in reserved date mixture and vanilla.
Drop mixture by heaping teaspoonfuls 2 inches apart onto greased cookie sheets. Bake at 200° fir 1 hour. Cool slightly on cookie sheets, and remove to wire racks.
Yield: about 5 dozen.
