Rolled and Sliced Cookies
Christmas Cookies
- 1 cup shortening
- 1 1/2 cups sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 tablespoons lemon juice
- 1/4 cup plus 3 tablespoons orange juice
- 4 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- Yellow, orange, and green paste food coloring
- 1 1/2 teaspoons grated lemon rind
- 1 1/2 teaspoons grated orange rind
- 1 1/2 teaspoons grated lime rind
- Yellow, orange, and green colored sugar
- Decorator Frosting
Cream shortening in a large mixing bowl; gradually add sugar, beating until light and fluffy. Add eggs; beat well. Stir in vanilla and juices.
Combine flour and salt in a medium mixing bowl; gradually add to creamed mixture, mixing until well blended. (Mixture will be stiff.)
Divide dough into fourths. Add desired amount of yellow food coloring and lemon rind to one portion, mixing well; add desired amount of orange food coloring and orange rind to second portion; mixing well. Add desired amount of green food coloring and lime rind to third portion, mixing well. Leave remaining portion plain.
Shape each portion of colored dough into a 6 inch long roll. Divide plain dough into thirds; roll each portion into a 6 inch square. Wrap a square around each roll of colored dough, pressing lightly to combine dough. Roll each in matching colored sugar. (To make colored sugar, stir in a small amount of liquid food coloring into sugar, blending until desired color is reached.) Wrap in waxed paper and refrigerate several hours or overnight.
Remove waxed paper, and cut rolls of dough into 1/4 inch slices; cut each slice of dough in half. Place 1 inch apart on ungreased cookie sheets. Bake at 400° for 6 to 8 minutes. Remove to wire racks to cool.
Decorator Frosting:
- 1 tablespoon commercial meringue powder
- 1 1/4 cups sifted powdered sugar
- 2 tablespoons warm water
Combine all ingredients in a medium mixing bowl; beat at high speed with an electric mixer 7 minutes or until stiff peaks form.
Yield: Frosting for 6 1/2 dozen cookies.
Note:
Decorator Frosting dries very quickly: keep covered at all times with plastic wrap. Fool coloring may be added to frosting, if desired.
