- 4 boneless and skinless chicken breasts
- Olive or vegetable oil
- Dry bread crumbs
- Parmesan® cheese
- Salt
- Pepper
- 2 to 3 bay leaves
- White cooking wine
Mix enough bread crumbs and Parmesan® cheese to coat chicken. Add salt and pepper. Dip chicken in oil, then in bread crumb mixture. Place in 1 layer in shallow baking dish. Place bay leaves on top. Pour cooking wine around, but not over, chicken. Bake covered in 325 degree oven for 1 hour. Remove lid and bake another 15 to 20 minutes until done and browned.
Serve with pan juices.
