- 3-1/2 cut all-purpose flour
- 1 tsp soda
- 2 sticks oleo
- 1/2 cup Parmesan cheese
- 1 cup ice water
- 1 cup cornmeal
- 2 tsp salt
- 1 cup grated cheddar cheese
- 4 Tbsp vinegar
Mix all of the dry ingredients with the oleo. Sprinkle with the vinegar and add ice water. Mix all together and knead until smooth. Refrigerate for 30 minutes. Roll out as thin as possible. Squeeze liquid margarine over and spread with you hand to cover all the dough you have rolled out. I usually make 3 rollings. Sprinkle Kosher salt, sesame seeds, and black pepper over the dough. Roll your rolling pin over to press into your dough. Cut in strips and bake at 350 degrees. Be very careful — do not brown, but be sure it cooks dry so it will be crisp. Don’t have any soft spots.
